Looking for a Paula Deen recipe
      #59584 - 12/30/07 08:02 AM

My neighbor had made Paula Deen's recipe for banana bread. I can't find this online, and my friend is out of town for a few weeks. I have bananas ready for bread! HELP!!!

I don't have her recipe, but I made this one this week, and it's a lot healthier than anything she makes (though I love her cooking), and quite good. I have my notes in brackets. Also, I think I'll add some sour cream next time.

Oatmeal Banana Nut Bread

1/2 cup shortening (half stick butter with applesauce to measure 1/2 a cup)
3/4 cup white sugar (1/2 sugar, 1/4 Splenda)
2 eggs (2 XL, one whole, one just white)
1 cup mashed bananas
1 teaspoon vanilla extract
(1/4 tsp cinnamon)
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup quick cooking oats
1/2 cup chopped walnuts
oatmeal/brown sugar/cinnamon for topping if desired

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, cream together the shortening and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition, then stir in the banana and vanilla.
In a separate bowl, sift together flour, baking soda and salt. Beat into creamed mixture. Stir in oats and nuts. Pour into prepared pan. Sprinkle topping on if desired.
Bake in preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
3 ripe bananas, mashed

Preheat the oven to 350. Grease a 9x5 loaf pan. In a mixing bowl, combine the butter and sugar; mix well. Add the salt, eggs, vanilla, flour, baking soda, baking powder and bananas. Mix well. Pour the batter into the prepared pan and bake for 50 minutes
