What is your all-time favorite main dish recipe?
We seem to frequently go back to this one:
Hot Taco Salad Makes 8 servings
2 pounds ground beef 1 envelope taco seasoning mix 1/2 16-ounce bag tortilla chips (or Nacho Dorito's) 1 small onion chopped 1 medium tomato chopped 1/2 head lettuce chopped Sauce 4 tablespoons butter 4 tablespoons flour 2 cups milk 1 pound velveta cheese
1. Brown Hamburger, drain, add taco seasoning mix and set aside.
2. Crush chips into the bottom of a 9x13 inch baking dish. Spread hamburger mixture over chips.
3. Layer onion, tomato and lettuce on top of hamburger.
4. In a large saucepan melt butter. Stir in flour and stir continuously until smooth. Stir in milk. Bring to a boil - stirring constantly and boil one minute. Add Velveta Cheese and stir until melted. Pour sauce over casserole.
5. Bake at 400 degrees for 10-15 minutes or until bubbly.

My family loves pork chops and their favorite is YumYum Pork Chops. It's very easy, quick, and cheap.
4 chops 3 tbsp. soy sauce 3 tbsp. ketchup 2 tsp. honey
Preheat oven to 350. Place chops in baking dish. Mix remaining ingredients and pour over chops. Cover with alum. foil and bake for about 45 minutes. Uncover and bake about 5 minutes longer.
Another favorite around here that's cheap, simple AND tasty is Ham and Au Gratin potatoes
2 boxes of Au Gratin potatoes 1 ham steak (around 1 lb.)
Just follow the directions on the box for the potatoes and dice up the ham and add to the potatoes and bake. So yummy!!

Salsa Chicken
1 cup brown rice (I use Basmati) 1½ - 2 cups salsa (I get the big container of Pace at Sam's) 1 chicken cut up ibnto 8 pieces (sometimes I cut each breast in half)
Preheat oven to 350° Rinse rice and put in ovenproof pan big enough to lay out a single layer of chicken (12" everything pan works). Mix in 1 cup of salsa and a cup of water. Lay chicken pieces on top, skin side up (you can use boneless, skinless breasts, but it's not quite as good). Spoon remaining salsa over each piece of chicken. Cover tight with aluminum foil and bake 45 min. Then remove aluminum foil and bake add'l 15 minutes. Let sit a few minutes and any excess liquid will be absorbed by the rice.
It's easy, a bit spicy, and never fails to please.

One of our favorites is Taco Skillet Casserole
Brown 1 lb ground beef. I usually add chopped onions, too. Drain grease. Add 1 can condensed tomato soup, 3/4 cup salsa, 1/2 cup water, and 6-8 small tortillas in 1-inch pieces. Heat through. Top with shredded cheddar cheese.

Another one we like is a Cheeseburger Macaroni Skillet Casserole
Prepare 1 pkg macaroni and cheese according to directions. Brown 1 lb ground beef. Add chopped onion if you like. Drain grease. Add 16 oz pkg frozen mixed vegetables. Stir-fry about 7 minutes until crisp-tender. Then add 1/2 c. ketchup, 1 Tbsp mustard, 1/4 tsp garlic powder, 1/4 c. water. When heated through, add 1/2 cup shredded cheddar cheese and prepared macaroni and cheese. Enjoy.
You can play with the seasonings to your taste.
