Salsa Chicken

1 cup brown rice (I use Basmati)
1½ - 2 cups salsa (I get the big container of Pace at Sam's)
1 chicken cut up ibnto 8 pieces (sometimes I cut each breast in half)

Preheat oven to 350°
Rinse rice and put in ovenproof pan big enough to lay out a single layer of chicken (12" everything pan works). Mix in 1 cup of salsa and a cup of water.
Lay chicken pieces on top, skin side up (you can use boneless, skinless breasts, but it's not quite as good). Spoon remaining salsa over each piece of chicken.
Cover tight with aluminum foil and bake 45 min. Then remove aluminum foil and bake add'l 15 minutes. Let sit a few minutes and any excess liquid will be absorbed by the rice.

It's easy, a bit spicy, and never fails to please.
