One of our favorites is Taco Skillet Casserole

Brown 1 lb ground beef. I usually add chopped onions, too.
Drain grease.
Add 1 can condensed tomato soup, 3/4 cup salsa, 1/2 cup water, and 6-8 small tortillas in 1-inch pieces. Heat through. Top with shredded cheddar cheese.
